Vegetarian Favourite - Lemon Spaghetti with Shaved Squash



Serves: 4
Preperation time: 10 to 15 mins 

400g of packet spaghetti
2 x tbsp of Extra Virgin Olive Oil  
1 x red chilli thinly chopped (To reduce heat remove seeds) 
500g squash, very finely sliced. 
2 x tbsp of lemon juice
2 - 3 tsp of lemon zest
100g Feta (cubed)
Mint Leaves
Freshly ground pepper to serve


1. Cook your spaghetti until aldente. See packet for cooking times
2. Heat oil over a gentle heat and add the garlic.
3. Add squash and chilli and cook for 3 - 4 mins until soft.
4. Add lemon juice and zest and combine.
5. Add spaghetti and the cubed feta
6. Top with mint and ground pepper.
